Our Story

A family roastery, rooted in tradition.

Al-Qitta began with a simple idea: that the difference between a good nut and a great one is freshness. Every batch we sell is hand-selected, slow-roasted in small lots, and pulled from the roaster the same day it lands on our shelves.

How It Started

From a dream, to Edmonton.

We arrived in Edmonton in 2016 with a passion for quality and a lifetime of craft behind us. Two years later, in 2018, we opened the doors to Al-Qitta — a place where that passion could finally have a home.

Emad, the store owner, has been roasting nuts for over 20 years. It is not just a trade to him — it is a craft he has refined decade after decade. He knows every roast by sight, by smell, and by the sound the nuts make when they are just right.

What drives him is simple: a love for roasting nuts and a desire to share that dedication with the world. Every batch that leaves our roaster carries those 20 years of experience with it.

“I have been doing this my whole life. Now I want everyone in Edmonton to taste what fresh, honest roasting really means.”— Emad, Founder

Roasted nuts in copper bins at Al-Qitta

The golden standard.

We source Iranian pistachios, Mediterranean almonds, and jumbo cashews from growers we've worked with for years. Nothing sits on a shelf for months — we roast on a daily schedule so what you take home tonight was warm this morning.

Our Middle Eastern delicacies — dried figs, mulberries, dates, and seasonal imports — are chosen one container at a time, the way our family has always done it.
